The Thin Beer As per normal, albeit unusual Catch-22 by Joseph Heller Main January 23, 2005 Danish Cooking Thursday night last week I had my first Danish cooking class. What I really learned is that the international students from Germany, Belgium, and Austria that were in my group can really cook. I thought I knew how to cook, but these people know how to do it all by hand. Who needs mixers? Who needs food processors? Who even needs to measure or weigh anything? They just look at the recipe, look at the ingredients and throw it all together. No problem. I was impressed. I had expected some sort of lesson, but really it was just a chance to try out some new recipes in a large group and then eat together - which made for a very nice evening. My group made kvarkbr¸d, r¸dbedesalat, fiskefrikadeller and chocolade lagkage......quark bread, red beet salad, fish patties and chocolate layer cake. We also had pea soup with yellow peas, thyme and leeks (yummy!), wheat rolls, carrot bread rolls, meatballs in curry sauce, red cabbage salad, hazelnut pate, and remoulade for the fish patties. We did all our cooking in an elementary school kitchen and then carried the food back to the student center and shared the meal. I have learned I want to get better with a knife, better with guessing weights and measures, and better at kneading bread with my hands. The less equipment I use and the less I lean on a recipe the faster we can eat! Vaersgo! | |
