Arte e Cucina – My Delicious Experience at Cooking School in Italia

his past July I had the privilege of attending Cooking School in Siena, Italy. I couldn’t have been more excited just thinking about it, cooking and Italy, what could be better! I had high hopes for this experience and my expectations were met thanks to Chef Luisa Neri and Direttore Sonia Di Centa at Arte e Cucina at Society Dante Alighieri, ( www.artandcooking.com My experience began on a Monday morning with a true Italian espresso and the introduction of the talented Chef Luisa. Chef Luisa had a lovely way about her, knew how to handle the students as well as the food and provided a most wonderful environment in which to learn. One day’s discussion about music resulted in Chef Luisa bringing in a small CD player with the CD’s of the artists discussed the day before in class. She didn’t miss a trick and her food was outstanding! When the chef is dancing around the kitchen, you know you are lucky to be learning from her. The class cast of characters varied daily and I made some wonderful new friends from our west coast all the way to Japan. The international flavor added even more seasoning to an already delicious mélange. Chef Luisa taught the class mainly in Italian (and why not?) but some participants needed a bit of English thrown in, that is where I found a niche and began to translate. Afterall, the language of food is universal and it was a pleasure to lend a hand. It turned out that Chef Luisa and I made a great team.

The European cuisine that appears to be peerless is Italian. Pasta with Clams in a Lemon Wine Broth
I grew up eating very simple meals that were repeated often in the course of a month. It was good food, but never complicated, and very little seafood was prepared that is except for the flounder my mother purchased in somewhat thin, brick-like frozen packages. The flounder was thawed, the fillets pulled apart, then floured and fried. It wasn't an unpleasant meal, it just wasn't anything special and I rarely looked forward to those meals. It must have made an impression on me, because I don't believe I've ever fried flounder for my family. Not that I have anything against flounder; I'm just aware of so many more possibilities with respect to seafood. I also believe the choices are more abundant for the home cook which makes cooking and eating far more pleasurable than ever before. My boys have grown up trying just about everything imaginable especially my youngest, now 15. That is most likely because I'm not afraid to try new types of cuisine, new flavors, and trust that if a recipe has been published, it has at least a fighting chance of being "good."

Italian Sugar Cakes
Beat 1-1/2 pounds of sugar and a half pound of butter to a cream; add 4 yolks of eggs, nutmeg and a pinch of salt. Stir in a half pound of flour, four ounces of currants, two ounces of chopped almonds, one tablespoonful of citron and candied orange peel chopped fine. Add the whites beaten stiff and bake in small well buttered cake-tins until done, then cover with a thin icing.
Spaghetti
Boil a half pound of spaghetti until tender. Drain. Heat one tablespoonful of butter, stir in a half pound of grated cheese, salt and pepper. Then add a cup of milk; let it boil and pour over the spaghetti. Sprinkle with salt, pepper and grated cheese and let bake in the oven until done. Can be served hot.
Italian Roast Beef
Cut several deep incisions in the upper round of beef and press into them lardoons of salt pork. Stick two cloves of sliced garlic and a dozen cloves in the meat. Season with salt and pepper and dredge with flour. Put in the dripping-pan with some hot water and let it roast until tender. Can be served with boiled macaroni.

In Southern Italy, you'll find olive oil, tomatoes, peppers, pasta and eggplant to be the staples of their cuisine. Fish and shellfish dominate the coastal regions. Northern Italy, with its' large dairy stocks, favor butter rather than olive oil, with an emphasis on polenta and breads, compared to pasta in the south. Fresh mozzarella cheese is abundant in Southern Italy, made from water buffalo milk. There is no more tasty cheese than fresh water buffalo mozzarella! Pair this with tomatoes and basil for a wondrous treat.

My mother was a very good cook. She did not make fancy meals, but everything she made was flavorful and made with high quality ingredients. We lived on a dairy farm so there were always fresh dairy products and meats. We also had huge vegetable gardens, a strawberry patch and apple orchard. My mother would can and freeze all the fresh fruits and vegetables. I was in college before I ate store bought bread. I am from German heritage so it is surprising that my passion is Italian cooking. I began helping my mother prepare food when I was five years old. I always loved watching her in the kitchen. My father is a meat and potatoes man. He never liked sauces of any kind. When I went off to college I shared a house with six other college students. Two of the other women were from Italian heritage. They taught me about the wonders of Italian cooking. When we all moved in together we agreed that on Sunday evenings we would have a house meal. We would change off cooking the meal. This would be our chance to catch up on what everyone did over the weekend and what everyone had going for the coming week. The rules for the meals were that everyone would sit at the table together, no one would take phone calls, and the food had to be home made, no ordering pizza. These Sunday evening dinners are my favorite memory from college. We would spend a couple of hours eating and drinking wine and sharing stories of our lives. Also having authentic Italian cooking was an added bonus. The two Italian girls were quite competitive when it came to putting together a meal. The result or this was that the rest of us were treated to outstanding dishes. One of the girls offered to teach me some of the techniques and recipes of Italian cooking. The thing that I like best about Italian cooking is that the ingredients are always fresh and simple. It is combining quality ingredients and cooking them properly that create the wonderful tastes.

In Remembrance by Mark D'Angelo H ave you ever thought of why some of Italian recipes include the head, feet and organs of such animals like sheep, goats, chickens and the like? They were simply obvious to the Italians from the old country. T o better understand this rational, one must understand the lives of the average Italian back then and traditional presentations of such meals. M ost Italians worked very hard to survive in their every day toil of existence. What ever they grew, raised, and harvested in olden times was for the governors, the local heads of the region. W hat was left for the farmer or herdsmen was at times, barely enough for his family to live on. Nothing was wasted, everything was utilized. Every animal part was used as a meal, when there was little left, to survive on. I n lean times, the organs where thought of as a delicacy, as some would tie these meals to special occasions. I remember my grandmother, after butchering a chicken, actually saving the chicken claws for soup. Believe it or not, these chicken claws give a great seasoned flavor to the chicken soup she made. My daughter of 16, cannot comprehend this utilization, and considers such things as repulsive. Some true Italian restaurants, render a handsome fee for such cuisine. T hink about this for a minute, if our forefathers and mothers thought the same way, we would not be here today, enjoying a fast food value-meal entree, of a McDonald’s Big Mac! The name of the game was survival then, and they were grateful for it.
