Is my Blog burning? cooks
Here's the complete, I hope, list of all those who posted an entry for the Is My Blog Burning? day. If I forgot anyone, pleas send me an e-mail and I'll add you ASAP. I also included a link to my entry in case anyone wants to paste the links somewhere else. You'll also find, after the links another soup recipe Hande, in her words "a half-German living in Italy", sent me via e-mail which I'm happy to post. I hope you had fun too coming up with the recipes and reading what the others came up with. I sure did. Some of you have written to me suggesting we repeat this "blog cooking experiment". I think it would be nice too. The question is when? and Which "theme"? I would also suggest that, if we want to turn this once off cooking day into something more regular, it might be nice for somebody different for each time to call a theme. Let me know what you think. CEPE (PORCINI MUSHROOM) AND CHESTNUT SOUP Serves 8 1 tablespoon duck fat** (or olive oil) 2 pounds peeled chestnuts 1/4 pound cepes sliced* 1/4 pound chanterelle mushrooms sliced* 1/4 pound oyster mushrooms sliced* 1/2 small onion diced 1/3 cup diced leeks 1 tablespoon minced garlic 8 cups chicken broth 1 tablespoon cepe powder* 1 tablespoon heavy cream (*See my Supplier Page for mushrooms **See my Supplier Page for D'Artagnan) In a large heavy soup pot, heat the duck fat or oil. Sauté each of the first seven ingredients 5 minutes before adding the next. Add broth and cepe powder, and season to taste with salt and pepper. Bring to a boil, skim fat, and cook over medium heat for 1/2 hour. Adjust seasoning and puree in a blender. Return to the pot and stir in the cream. Back To The Index YELLOW AND RED PEPPER BISQUE Makes about 5 cups Back To The Index SWEET RED PEPPER AND CRAB BISQUE 8 Servings 2 tablespoons (1/4 stick) butter 1 cup finely chopped onion 1 cup chopped celery 1 cup chopped red bell pepper 1 1/4 t teaspoons Old Bay Seasoning or other seafood spice blend 3 cups fish stock or bottled clam juice 1/2 cup diced peeled russet potato 1/2 cup half and half 1 pound crabmeat Melt butter in heavy medium saucepan over low heat. Add onion, celery, bell pepper and Old Bay Seasoning. Cover. Cook 10 minutes, stirring twice. Add stock and potato; bring to boil. Reduce heat, cover partially and simmer until potato is very tender, about 30 minutes. Working in batches, puree soup in blender. (Can be made 2 days ahead. Cover and refrigerate). Return soup to saucepan. Add half-and-half; bring to simmer. Mix in crab. Season with salt and pepper. Cover let stand 1 minute. Ladle into bowls.

Warmth is great and all, but one of the best things about summer is potatoes growing, barbecuing them, and of course, lathering them in all sorts of tasty things and making a potato salad.
For years I didn't go near the German variety of tater salad I was a strict mayo and potato gal. This is probably a good thing since I never would have dug the sauerkraut flavor that lingers in the obviously German mix. Now, they're both pretty darned tasty. The mayonnaise variety offers the creaminess of the lathered potato with the crisp crunch of celery and onions. The German variety, on the other hand, offers a warm and tasty mixture of potato and vinegary sharp goodness. (And it isn't too shabby cold either.)

Soup: Food For The Soul (Excerpts from Hooked On Raw by Rhio) "HOT" CREAM OF CAULIFLOWER SOUP cup carrot juice cup Almond Milk see Beverages) 1" slices of ginger, juiced (or to taste) small cauliflower, chopped (approx. 2-3 cups) avocado oz. hot filtered water (optional) tsp. garam masala tsp. curry powder tsp. red bell pepper powder In a juicer, make the carrot and ginger juice. Put the juices into the blender with the Almond Milk and all the other ingredients, except the hot water, and blend well. After the soup is well blended, add in the hot water, blend briefly and serve "hot." The addition of the hot water makes this into a warm soup. Serves 2. Serve with Macaroon Chews (see Recipe Index) and you'll think you're in exotic India! GREEN POWER SOUP cups cucumber juice cups Marinated Collard Ribbons see below) avocado (If you're on a reducing diet, use only 1 or 2 tbsp. to cream it up a bit) lemon, juiced

boiling, add the blended vegetables with the salt and pepper. Also add nutmeg if desired. This soup is especially good served with a

Pumpkin Soup #2 3 rashers Bacon (optional) 300ml Cream 2 Onions 4 Tablespoons white wine 1 large Potato Sage, Rosemary, Thyme 750g Pumpkin 1 Tablespoon Nutmeg 1 Tablespoon Butter Pepper, Salt 600ml Chicken Stock Saute chopped bacon, onions and herbs in the butter, but do not brown. Cook pumpkin and potato in water. Pass bacon, onions, potato and pumpkin through a fine mincers, and then add pumpkin water, chicken stock and two thirds of the cream. Simmer five minutes. Add wine, nutmeg and seasoning to taste. Cook till smooth. back to top Curried Kumara ( sweet potato) Soup 75g butter 2 cloves garlic 1-2 tsp curry powder (I also add extra cumin because I like it) 500g kumara 1 1/2 cups water 2 tsp instant chicken stock about 3 cups milk 1/4 cup cream (optional - but realy good) Add the crushed garlic and curry powder to the butter in a large suacepan. peel the kumara and slice to about 1 cm thick.
