    Who doesn't remember sitting to a steaming bowl of canned chicken noodle soup? Americans love their chicken noodle more than any other canned or dried soup. Tomato and cream of mushroom aren't far behind. And you can still buy the same old fatty and salty versions that will transport you back to your childhood. But now there's a new generation of great-tasting soups that pose less of a threat to your blood pressure.
    Salt Mines
    For years, salt has been the Achilles heel of most prepared soups. Many of Campbell's traditional red-and-white label soups, for example, still supply more than 800 mg of sodium in a modest one-cup serving. That's a third of a day's sodium in a food that may only contain a twentieth of a day's calories. And while it's possible to find lowsalt soups, their taste is often unusual, to put it kindly. What about a middle ground? In 1993, the last time we rooted around in the soup aisle, we found only a smattering of cans and packages with enough taste to carry off their lower salt levels (300 to 500 mg per cup). Now there are dozens. It's not just luck.

    Korean soups (t ang) ar e eaten year round but enjoyed most, like the stews, w hen the temperature drops below freezing. Unlike the stews, spice is not a main ingredient but can be added if desired. The one exception to this is yuk-kae-jang. Here spice is the main ingredient. It contains strips of beef and just looking at it, with its red broth, you know you'll be breathing fire. Sam-gae tang is a delicious, healthy soup that is made with a whole chicken, ginseng, garlic and a jujube. It's believed by Koreans to give one "stamina" although I've personally never experienced this burst of energy. Kal-bi tang is made with boiled pork short ribs and most commonly green onions. The restaurant can make or break this soup depending on the quality of meat that is used. Sol-long tang is a hearty beef stock soup that you add salt to.     Chinese Cooking - Asian Cuisine
    Many people appear to have the impression that it is necessary to use a great many rare and exotic materials and ingredients in Chinese cooking. This is not so at all. The food materials used in Chinese cooking are for all practical purposes the same as those used in the Western style (the exceptions which exist merely prove the rule). As for flavoring and seasoning ingredients, so long as you have soy sauce, which is obtainable almost anywhere these days, you can cook Chinese. All the other ingredients and seasonings used are similar to or the same as those normally used in Western cooking, such as salt, pepper, chili powder, mustard, garlic, onion, spring onion (scallion), parsley, chives. An exception such as root ginger can be replaced by chopped lemon- or orange-peel shavings. Some other ingredients and seasonings which would be useful to have around when you intend to cook Chinese include:
    • Cornstarch Dry sherry Tabasco Tomato sauce or tomato puree Gelatin Pickles and chutneys Beef and chicken stock cubes or powder
    If convenience foods or frozen foods are admissible in good Western cooking, they can certainly also be incorporated in good Chinese cooking, provided they are pepped up with a proportion of fresh foods at crucial points in the process.

    Chayote Soup From Nicaragua
    Chayotes are a pale green vegetable.  They are sort of shaped like a pear.  This soup is also common in Morelos, Mexico, without the chicken. 2 large chayotes, peeled and sliced
    pinch of salt
    1 medium onion, finely chopped
    1 clove garlic, chopped
    2 tablespoons butter
    1 tablespoon flour
    4 cups of chicken stock
    1 cup of cooked shredded chicken (about ½ pound)
    white pepper
    Using  enough water to cover the vegetable, simmer the chayotes in salted water until tender, about twenty minutes.  Reserve two cups of the cooking liquid.  Place the chayotes and the liquid it in a blender or food processor.  Blend until you have a smooth puree. In a saucepan sauté the onion and garlic in butter until the onion is soft.  Stir in the flour and cook for about 1 minute.  Do not brown the flour.  And the chicken stock and cook until the mixture is smooth.  Add the chicken, the chayote mixture, salt and pepper, and simmer covered about 5 minutes serves about 4 – 6 people

    Potato Rice Soup
    • 1/4 cup ground beef
    • 2 Tbs. tomato paste
    • 1 Tbs. vegetable oil
    • 3 cups water
    • 2/3 cup long grain rice
    • 1 potato, diced
    • additional water
    • 1/2 cup parsley, cut up
    • salt to taste
    Using a 2 quart saucepan, brown the ground beef. Add the oil and tomato paste and cook a few more minutes. Add the water and bring to a boil. Stir in the rice and cook over medium heat 15 minutes. Add the potato and continue cooking until potato and rice are tender. Add more water to nearly fill the pan, and bring to a boil again. Add salt to taste. Turn off heat and stir in parsley.
    Rice Soup
    • 2 cubes of chicken or beef bouillon
    • 1 Tbs. oil
    • 2 Tbs. tomato paste (or 1 cup of diced fresh tomatoes)
    • 3 cups water
    • 2/3 cup long grain rice
    • additional water
    • salt to taste
    • 1/2 cup parsley, cut up
    Mix the oil and tomato paste in a 2 quart saucepan. Add water and bring to a boil. Add rice and boil at medium heat until rice is tender, 25-30 minutes. Add salt to taste and enough water to nearly fill the pan. Bring to a boil again. Turn off heat and stir in parsley.
    Red Lentil and Vegetable Soup
    • 1/4 cup ground beef (or 2 cubes bouillon or 1 can broth)
    • 2 Tbs. tomato paste
