It is sometimes confused with stew A bowl of soup and a piece of pizza. Traditionally, soups are classified into two broad groups: clear soups and thick soups . The established French classifications of clear soups are bouillon and consomm© . Thick soups are classified depending upon the type of thickening agent used: pur©es are vegetable soups thickened with starch; bisques are made from pur©ed shellfish thickened with cream ; cream soups are thickened with b©chamel sauce; and velout©s are thickened with eggs butter and cream. Other ingredients commonly used to thicken soups and broths include rice flour , and grain One of the first types of soups can be dated to about 6000 BC Boiling was not a common cooking technique until the invention of waterproof containers (which probably came in the form of pouches made of clay or animal skin) about 9,000 years ago.

February's Focus: Soup's On!
Thursday, February 1, 2007 In February, the shivers of hard winter give way to the winds of early spring. Both, for sure, call for soup to soothe the soul and warm the innards. So I dubbed February 2007 the month of Soup, Glorious Soup . I cooked soup all month and invited soup enthusiasts from all over the world to cook soup too. And so they did, in droves.
Just like a good potluck, somehow our collection of soup recipes offers a soup for every taste and circumstance.
The soups that take hours to simmer stove-top, the ones that toss together in minutes. The soups made from pantry staples, the ones with hard-to-find ingredients. Newly discovered soup recipes and the long-time family favorites. Recipes carefully followed and others invented with what was on hand.

Ingredients
1 yellow onion, chopped
1 rib of celery, chopped
I carrot, chopped
1 Tbsp butter
1 butternut squash, peeled, seeds removed, chopped
1 tart green apple, peeled, cored, chopped
(squash and apple should be at a 3 to 1 ratio)
3 cups chicken broth (or vegetable broth if vegetarian)
Pinches of nutmeg, cinnamon, salt and pepper

    Ask someone about soup and there's almost always something in their answer that makes it sound like medicine.
    Tasty medicine.
    Take Mike Golenzer, who owns The Bagel, where they serve giant vats of made-from-scratch soup. Golenzer's partial to the chicken broth with kasha. "They're buckwheat groats, good for the arteries," he said.
    And there's Barbara Petratos, office manager of Greek Islands, who loves avgolemono soup: "It reminds me of Mom, when I was sick growing up, and I would cuddle up on the sofa with a nice big cup of it."
    You just don't hear people talk like that about, say, steaks. Or Pop-Tarts.
    But soup, especially hot soup?
    Soup restores. Soup warms you up from the inside out. It cures colds. It protects against the flu. It reminds us of Mom and Grandma and days spent sipping something homemade and hot in bed.
    We eat soup year round, but really, it's no surprise that chilly weather kicks up soup sales, said Federico Comacchio, executive chef of 437 Rush, which ladles up bowls of hot lobster bisque every day, plus specials like cream of asparagus and pasta e fagioli, the chef's favorite.

Watercress Soup with
Red Pepper and Potato Tumbleweed
Ingredients:
1/2 pound fresh watercress 1 onion, diced 2 teaspoons olive oil 1 quart chicken stock 2 cups milk or half and half salt and pepper to taste
Saute watercress and onions in olive oil until soft. Add chicken stock and simmer 10 minutes. Using a blender, blend well and return to pot. Add heavy cream or milk and bring to a boil. Season with salt and pepper.
Rouille:
1 red bell pepper, roasted and peeled 1 clove garlic 2 egg yolks 1/2 cup olive oil salt and pepper
In food processor, blend peppers until smooth. Add egg yolks and garlic, then pulse. Add olive oil in a slow stream to emulsify. Season with salt and pepper.
Tumbleweed Potatoes:
1 potato, peeled and julienned into 1/8" strips

3/4 lb kale, stems and center ribs cut out and discarded, then leaves very finely chopped in a food processor (4 cups)

    26 garlic cloves (unpeeled)
    2 tablespoons olive oil
    2 tablespoons (1/4 stick) butter
    2 1/4 cups sliced onions
    1 1/2 teaspoons chopped fresh thyme
    18 garlic cloves, peeled
    3 1/2 cups chicken stock or canned low-salt chicken broth
    1/2 cup whipping cream
    1/2 cup finely grated Parmesan cheese (about 2 ounces)
    4 lemon wedges Preheat oven to 350°F. Place 26 garlic cloves in small glass baking dish. Add 2 tablespoons olive oil and sprinkle with salt and pepper; toss to coat. Cover baking dish tightly with foil and bake until garlic is golden brown and tender, about 45 minutes. Cool. Squeeze garlic between fingertips to release cloves. Transfer cloves to small bowl. Melt butter in heavy large saucepan over medium-high heat. Add onions and thyme and cook until onions are translucent, about 6 minutes. Add roasted garlic and 18 raw garlic cloves and cook 3 minutes. Add chicken stock; cover and simmer until garlic is very tender, about 20 minutes. Working in batches, pur©e soup in blender until smooth. Return soup to saucepan; add cream and bring to simmer. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium heat, stirring occasionally.)

Yogurt Soup (Yayla ‡orbası)
Yogurt soup is a popular comfort dish both in Turkey and Central Asia. To me, it shows how we, Turks, are obsessed with yogurt; we even cook it! It's also a very common sick soup; even inhaling the strong smell of mint or tarragon makes you feel better. Although Turks love this soup, I can see why many people, especially those who are not in good terms with yogurt, may not like this. So, the decision is up to you: to try or not to try...
1/4 cup rice
5 cups of water (if you wish you can use half chicken stock, half water)
2 cups of plain yogurt
1 egg
2 tbsp flour
2 tbsp butter
2 tsp dried mint or tarragon
1 tsp salt
-Boil rice in 5 cups of water with salt until (very) soft.
-In a bowl, beat the egg and flour well, and then add yogurt and mix. With 1-2 tbsp water lighten up this mixture. -Put the yogurt mix in a pot and start cooking on very low. It's important that you start with low heat, otherwise yogurt would curdle. Give yogurt some time to get used to heat. Cook on low heat for approximately 15 minutes and keep stirring. -Slowly pour in rice along with water into the soup. Keep stirring. First let it boil on medium and then turn it down and cook for another 10 minutes.
