Taught in the Department of Chemistry , Food Science is offered as a subject major for the BSc at undergraduate level, and the BSc(Hons), PGDipSci, MSc and PhD at postgraduate level. It is also possible to complete a GradDipSci in Food Science.
Food Science is the study of all aspects of food. The programme covers the structure and composition of foods, their nutritive values, and the properties that make them so attractive - colour, smell, taste and texture. Recent developments such as functional foods, including nutraceuticals and foods for personalised nutrition, are studied. The preservation of foods and how they are altered during processing is an important part to the degree.
Undergraduate Food Science
The Food Science major is designed to enable the student to apply a range of disciplines to understand foods and their processing.

Overview
Food science is the study of the nature of foods, what causes deterioration, and how to process and preserve foods efficiently and effectively. Food science majors develop an understanding of the properties and characteristics of foods through courses in biochemistry, chemistry, microbiology, physics, and more. Food technology courses build on this foundation and apply it to the study of processing, preservation, sanitation, storage, and marketing of foods. Food science is the real-life application of chemistry, microbiology, and other basic and applied sciences to the production, processing, preservation, evaluation, and distribution of food. The many facets of skills learned as part of this Bachelor of Science degree help the food scientist convert harvested materials into high quality food products that are safe and nutritious. Food scientists are concerned with high standards of quality and safety, new methods of manufacture and preservation, new products, and new packaging materials/methods.     Food Science
    The Food Science Department focuses on the physical, chemical and biotechnological aspects of food raw materials, ingredients and food products.
    Our scientists in collaboration wit nutritionists provide the scientific basis for innovative food concepts which deliver consumer benefits in the areas of pleasure, health and Wellness, and food quality and safety. For an innovative approach in the way we make food products, we work on three main aspects of modern foods.
    food processes: e.g., molecular basis of unit operations including extraction and refining of ingredients, or biotransformations of raw materials and ingredients.
    functionalities of macronutrients: e.g., structure forming properties of biopolymers, or ingredient interactions.

    It was a case of meet, greet and eat when 200 food science students met more than 20 food companies at UNSW last week for an inaugural Food Technology Careers Expo.
    Students from UNSW, University of Newcastle, the University of Western Sydney and TAFE Sydney descended on the Squarehouse last Thursday, October 27, where prospective employers had set up displays, including samples of their wares.
    A joint venture between the UNSW Food Science Students' Association and academics, the Food Technology Association of NSW and the Australian Institute of Food Science and Technology (NSW), the event aimed to help students define their career path.
    Head of the Food Science and Technology group, Professor Graham Fleet, said the idea had evolved after years of calls from companies looking for graduates, only to find they had already been snapped up.
    "Students and prospective employers need to be meeting much earlier in the process," he said. "We're very pleased with the results of the expo. The industry response has been excellent."
    Company booths were set up for students to meet company representatives and discuss job opportunities. Theatre-style presentations were also given by a range of speakers, including careers and food science experts.

    Better Process Control School
    Under the direction of the Department of Food Science, LSU AgCenter Under the final Good Manufacturing Practices (GMP) regulations for thermally processed low-acid foods and can closure, processing departments of food industries must operate under the supervision of a person who has successfully completed a course in the principles of thermal processing and container closure evaluation taught by an FDA-approved institution. To assist food industries in complying with the FDA/USDA regulations, a four-day Better Process Control School for supervisors of food canning plants is offered by the Department of Food Science in the Louisiana State University AgCenter in conjunction with the FDA and the Food Processors Institute (FPI). Instruction is given by members of the LSU AgCenter Department of Food Science and by experts appointed by the FDA and FPI, all of whom have wide experience in thermal processing, container handling, federal regulations for manufacturing and processing foods, food plant sanitation and food microbiology. An exam is given for each topic. Successful participants are awarded a certificate of completion and are
    registered with the FDA as qualified food canning supervisors.

    Food Science Stream, Bachelor of Science
    Food Science is a major within the Bachelor of Science which is normally completed in 3 years of full-time study.
    Prerequisites
    Units 3 and 4: a study score of at least 25 in each of English (any), Mathematical Methods (either), and in one of Biology, Chemistry or Physics.
    Food Science Major
    The course also has elective and breadth subjects that can be accessed from across the university. Graduates from the Bachelor of Science will be equipped with a professional qualification that meets the environmental and technical challenges of the present and future. Outcomes from the course lead towards employment in positions across government and private industry or to further study through a fourth-year Honours degree or Masters or PhD professional postgraduate programs.
