Seed Germination
Plant physiologists began to assist in the understanding of seed germination as the brewing industry sought to improve the alcohol yield in beer making. The industry already knew that it was important to sprout barley seeds. This process was accomplished by soaking seeds in water, then allowing the germination process to produce sugar from starch. The sugar produced is maltose (glu-glu, a disaccharide) so the sprouting process was called "malting." Getting more of this maltose produced was clearly the way to improve alcohol yield per bushel of barley seed. The diagram (far below) shows the basic process discovered by plant physiologists. You will notice that gibberellic acid (GA) is produced in the embryo. The imbibition process carries the gibberellic acid from the embryo to the endosperm. The aleurone cells (protein storage cells) toward the outside of the endosperm respond to this gibberellic acid. Because GA is made in one cell, transported, and another cell responds to it, GA has been named one of the several classes of plant hormones. The GA stimulates the transcription and translation of alpha-amylase in the aleurone cells. The storage proteins serve as a source of amino acids for the translation process. The finished amylase is exported to the cells toward the interior of the endosperm. This is an exocytosis (secretion) process. There, the amylase catalyzes the hydrolysis of starch into maltose.

Properties of Water
Water is a polar molecule
Water, H O, is a molecule with polarity. The central oxygen atom is more electronegative than the two hydrogen atoms, and so the electrons shared in the two bonds spend more time around the oxygen atom than around the hydrogen atoms. This structure is shown below: This electron distribution gives the central part of the water molecule a partial negative charge. The terminal hydrogen atoms thus have a partial positive charge. These partial charges of course mean that the hydrogen ends of one water molecule are attracted to the central oxygen portions of a neighboring water molecule. This kind of attraction is called hydrogen bonding
Water is an excellent polar solvent
The polarity of the water molecule gives it the ability to dissolve polar molecules as well as less-polar molecules. In fact, among known liquids, water dissolves the widest range of chemical solutes. This makes water a medium for chemical transport and exchange. For plants, water dissolves soil minerals and carries them up the plant in the transpiration stream in the xylem; photosynthesis produces carbohydrates which are dissolved in water and carried from the leaf to the rest of the plant in the translocation stream in the phloem. Solubility in water causes phospholipids to orient themselves into membrane bilayers, and causes amino acid R-groups to twist in space to bring about protein conformation.

The function differs in different parts of the plant. cortex = storage tissue found in roots and stems cork phloem = conducts sugars from the photosynthetic tissues of the stem or leaf to the growing tissue or to the cortex of the stems and roots xylem = conducts water and minerals from the roots to the stems, flowers, fruit, and leaves
      Xylem vessels have a larger diameter than xylem tracheids
    apical meristem = tissue that divides by mitosis to add to the length of roots and stems cambium = lateral cambium
      cork cambium = tissue that divides by mitosis to produce cork in the bark of a tree vascular cambium = tissue that divides by mitosis to produce phloem (on the outer side) and xylem (on the inner side). This tissue is responsible for adding the annual rings to a tree. The annual rings are made of xylem (wood)
    pericycle = tissue in the root that is the origin of branch roots endodermis = "inner skin"; tissue that surrounds the vascular cylinder of the root. The cell walls are coated with wax (suberin) that prevents water from escaping from the root.

What is the molarity of pure water?
density = 1 gram ml molecular weight = 18 gram mol What is the molarity of sea water? density = 1.025 gram ml = 1025 gram L concentration NaCl = 29.5 gram L concentration water = 1025 - 29.5 = 995.5 gram L Not such an impressive difference (55.6 vs 55.3)! Movement of water must be more than diffusion based on concentration of water!
