Pumpkins were used by American Indians long before Columbus visited our shores, and pumpkins readily found their way to the first Thanksgiving table. Pumpkins were used by early settlers much as we use them today – for food and decoration. Washington Irving wrote about the pumpkin in "Legend of Sleepy Hollow." The term "pumpkin" has been the subject of many scholarly discussions. The scientific name of most pumpkins is Cucurbita pepo (Jack-o- lantern types). Many of the large fruited types such as ‘Boston Marrow’ and ‘Mammoth’ are Cucurbita maxima , while the buff-colored sugar-pie or ‘Dickinson’ variety, Cucurbita moschata , are excellent for pies or processing. All pumpkins have hard shells when mature. Soils – Pumpkins are well-adapted to most North Carolina soils. The soil should be well-drained. The optimum pH is 6.0 to 6.5. Take a soil test to determine pH and fertilizer requirements. Do not use fields that have had other vine crops (melons, cucumbers, etc.) during the past 2 years.

Today's butternut squash recipe comes from it. The book is called Homegrown Pure and Simple and it is a beauty - hardback, big color photography, clean design, nice detailing. One of my favorite features is actually the font they use for the recipe titles - it looks like someone has carefully drawn in the names of each recipe with the kind of penmanship you might see on the label of a jar of summer preserves. That being said, I see a lot of pretty cookbooks, and at the end of the day only a small fraction really resonate with me -

Suslow and Marita Cantwell Department of Plant Sciences, University of California, Davis, CA 95616 Maturity Indices Summer squashes (soft-rind) are consumed at a range of physiological maturities but are defined as immature fruits of the diverse Cucurbitaceae family. Depending on cultivar and temperature, the time from flowering to harvest may be 45 to 60 days for zucchini, yellow straightneck or crookneck, and scallop (Patty Pan-type) squash and 75 days or more for many of the Sponge squash (immature gourds) such as Luffa. Fruit may be harvested at a very immature stage, at the desired fruit size, before seeds begin to enlarge and harden. A thin, soft external rind and external glossiness are also indicators of a pre-maturity condition. The entire fruit is edible, either raw or cooked, without removal of seeds and seed cavity tissue. Small, young fruit are tender and generally have a slightly sweet taste. Quality Indices Summer squash quality is based on uniform shape, tenderness of rind and internal tissue, overall firmness, a glossy skin color, and an intact well-trimmed stem portion. Uniformity of shape is an important quality factor and is defined to be characteristic of the type or variety, and free of twisting, groves, or other disproportionate growth defects. Spicy Lamb Stew with Butternut Squash Recipe

Filed under Lamb Main Course Soup and Stew Wheat-free With shorter days and colder nights, this richly flavorful lamb stew with butternut squash is a great way to fill up and stay warm. 1/2 teaspoon freshly ground black pepper
1 pound lean lamb shoulder, on the bone, trimmed of fat, cut into 1-inch cubes
3 Tbsp olive oil
1 medium onion, chopped
1 Tbsp tomato paste
1 Tbsp Sweet Hungarian paprika
1/8 teaspoon red pepper flakes
4 pounds of butternut squash, peeled, seeded, cut into 1-inch cubes
1 14-oz can of garbanzo beans (chickpeas), rinsed and drained (about 1 1/2 cups)

How to Squash Negative Thought Patterns

Step 1:  Turn the negative thought into a mental image. If you have trouble visualizing, you can also do the above in an auditory fashion.  Translate the negative thought into a sound, such as a jingle that you sing.  Go through the same process with sound instead of imagery.  It works either way.  I happen to prefer the visual method though. Step 2:  Select an empowering replacement thought. Step 3:  Turn the positive thought into a mental image. Step 4:  Mentally chain the two images together. Step 5:  Test.
